I had one customer who took over a year to convince to let me sharpen her knives. Shortly afterward they had quick dinner which included steak and paper plates. Their daughter pointed out that Dad had used the same cutting pressure as when the knives were dull and inadvertently sliced the steak, the plate, the table cloth, and into the table. Another customer asked me if I could repair the knives his son had used to play theater sword fight and stove top metallurgist. I reground all of edges to remove the 1/8 inch gashes and 1/2 inch broken points and then resharpened them. He barely recognized them as his knives. I have also worked with manufactures to get customers warranty replacement pieces. I'm serious about the quality of my work.
